David Bustos, Owner
Born and raised in Las Vegas, NM, David Bustos is no stranger to serving the community. A retired educator and longtime basketball coach, David has made a second career of bringing people together over good food. As the owner of Dave’s Diner and now Plaza Grill, he continues his passion for building community, now inside the walls of the historic Plaza Hotel. “I’ve always believed the Historic Plaza Hotel is the heart of Las Vegas. Our goal is to create something special that brings both locals and visitors together in this iconic space.”
Theresa Diaz, General Manager & Marketing
With over 25 years of experience in government procurement and a background in restaurant operations, Theresa brings leadership, hospitality, and energy to the Plaza Grill. Originally from Gallup, NM, she’s proud to now call Las Vegas home. “I’m honored to serve this community and excited to welcome everyone who walks through our doors.”

Rooted in history and full of local flavor, our restaurant serves up classic American and New Mexican dishes with a modern touch. Join us daily from 8am–9pm for breakfast, lunch, or dinner—and don’t miss our Friday rotating specials and signature steaks that locals are already raving about. Reservations welcome.
The Bar (Opening September 2025)
Our upcoming bar will feature local musical talent, specialty cocktails, and exclusive small-plate offerings in a lively, welcoming environment. Once open, it will be the perfect place to relax, connect, and enjoy the spirit of Las Vegas, NM.
The Historic Ilfeld Ballroom
Located within the Plaza Hotel, our beautifully restored ballroom is now booking events for weddings, celebrations, and community gatherings. From destination weddings to traditional New Mexican dances, this elegant space offers timeless charm and modern convenience.
Plaza Sip & Savor (Opening Early July)
Our soon-to-open café and patisserie will serve specialty coffee, teas, refreshers, and house-made pastries and cakes—perfect for a relaxing morning, afternoon treat, or casual meet-up.
